Legal Question in Criminal Law in Texas
If someone is given a plea bargain in exchange for their testimony against someone else such as getting charged with "Attempted Murder" instead of "Murder" and if the person that they testified against wins an appeal allowing them a new trial can the DA cancel the deal they made originally and re-charge them with Murder if they do not agree to testify in the person's 2nd trial?

Not usually but it may depend on the wording of the contractual agreement.
