Legal Question in Criminal Law in Texas
If the prosecuting da in one case says they are investigating possible additional charges, how can I find out what they are, and how long do they have to investigate and either charge or dismiss?

You have no right to find out what the DA is investigating, but talking to a local criminal defense attorney may answer that question. Communications with an attorney are confidential.
The amount of time between an alleged criminal act and when the State can file charges is known as the limitations period, so named because of the statute of limitations which limited State action on cases beyond a particular time limit. It varies from2 years on misdemeanors, to 3 years for many felonies, but can be as long as 5, 7, 10, or unlimited depending on the charge (most notably, murder).
