Spousal privlege
Does one have to testify against their spouse in Texas? This is an assault case and my spouse also has bipolar disorder. I do not want to testify

There is no spousal privlege in Texas with regards to Assault (Family Violence). The law has long since changed and you may be compelled to testify, although that's a bad move for the prosecutor. However, I've seen them time and time again compel testimony. You may be brought to court by the police if you fail to answer a subpoena. Call the prosecutor and talk to them and tell them in no uncertain terms you are not going to testify and see how they react.
