can i still use my right to a trial by jury after signing off those rights?

if you sign off that right for a plea deal and you plead then no. You can always exercise your right to a jury trial until the judge accepts the plea offer. Otherwise, you can only get the right to a jury trial by getting your case overturned on appeal.

I'm not sure what you mean by "signing off those rights." But, I will try to answer. After you waive your right to a jury trial and plead guilty, you may request that the court permit you to withdraw your guilty plea. But this is limited to the judge's discretion. You should discuss this option with your attorney.
