If you give any self-incriminating evidence in the proceeding, can it be used against you in the state of TX?

Based on what you have stated and not knowing specifically what "proceeding" you are speaking of; generally anything you say may be used against you. Even if you are a "witness," your statement might be used against you to implicate you in the same or another crime.
