is it illegal for me to consume alcohol with my parents at Wurstfest in New Braunfels when I'm 18

You cannot be served alcohol. Most places will not permit your parents to give it to you. You would like receive a minor in consumption ticket if you are one step away from your parents. You don't need to drink while you are under age.
