How can I get out of being power of attorney for my mother-in-law. She has Alzheimer's and cannot make decisions and I want to get off her checking account and turn it over to her son so he can be responsible for her bills.

Go to the bank and ask that your name be removed.
Destroy all the copies of the power of attorney - that can be difficult because you might not know who has copies.
You and the son need to work together to get this matter resolved.

You need an elder care attorney, if you can afford one. Or, talk to a probate attorney who deals with elder issues a lot -- in Houston I refer a lot of people to W. Kevin Alter. He's patient and very kind.
There are people called "care managers" that can assist the family in all aspects of your mother-in-laws's care.
There is a wonderful elder care guide available for free. I picked up a copy in Harris County Probate Court but I'm sure they are available other places.
Check out elder sites on-line.
Also, check the State of Texas & Office of the TX Attorney General on-line sites for leads for elder care.
The Alzheimer's group in Houston Texas is a wonderful resource too.
