Can I just type up my own marital agreement settlement papers and have myself and my soon to be ex husband sign them in front of a notary instead of having to go through a lawyer or go to court?

Of course!! You can do anything you want to. It's just not legal. But you didn't mention that you wanted to do something legal -- just wanted to do something. Go for it. Good Luck.
