Mother wants to adopt out unborn child; father wants custody.
My brother's ex-girlfriend is pregnant with his child and she wants to give the baby up for adoption. What rights are there for the father to prevent an adoption and gain custody of the child?

Hire a lawyer, establish paternity and file for conservatorship.

Just to amplify Ms. Langford's concise but correct answer, the father's rights have to be terminated by the State District Court. The father can contest this, but will have to show that it is in the best interest of the child that he have custody. Assisting, or attempting to, the mother in pre-natal care would be a good start. You should develop evidence of this effort. That's where the lawyer comes in.
