Is notorization enough in custody agreement?
I am separating from my husband and moving out of state. We have agreed that he will keep our 2 children here in Houston, TX until I am working and settled in Arizona, and then i will bring the children to live with me. I want to be sure to get the agreement in writing and notorized with both of our signatures before i leave, to avoid any possibility of him going back on the agreement or making false claims of abandonment while i am gone, etc. We had planned to type the agreement up together and have it notorized, but will this be enough? I want to make 100% sure the document will hold up in court and that he will not be able to "change his story" without my consent.

No. The agreement you propose is not binding. Only a court order is binding. You need to see a lawyer before you go any further with your plans.
