Do the online standard forms for prenuptials hold-up in court if they are prepared correctly and notarized?

That depends entirely on the on-line form. Some may, others are just thrash. If you have enough to protect to want a pre-nup, then it is worth spending the money to have it done right. Nothing is worse than penny wise and pound foolish.
