Is there anything that I can do to prove that my son's father is lying about his income in our child support case?

You can subpoena records from his employers and obtain his tax returns. If you suspect that he is being paid in case, that is much harder to prove. Also, if you were married and he did that while you were married and you signed tax returns knowing that, you might be at risk on tax fraud charges.
