Legal Question in Family Law in Texas

Which will to use

My husband & I are going out of the country and have my 10 & 7 year old granddaughters and his mother living with us. I have adult children who I do not want to have anything of value we have. If anything were to happen to us simultaneously we want my husband's mother to be able to execute the estate. What will should we use in this case?
