Contracts and signatures
Is it legal for a business to add signatures, dates or notarization to any kind of paper work of a contract after copies are given to a consumer that didn't previously have any of that information on it?

Some of it may be, if it's a question of filling in blanks that you'd left, or if it's purely a ministerial act (dealer signing approval, etc.)
If you signed before a notary, and your copy was made before you signed or before the notary signed, then that would be legal as well.

Generally, no. It's potentially fraudulent and possibly a deceptive trade practice. The real question is whether you suffered any damages as a result of the changes.
