Legal Question in Civil Litigation in Texas
In the U.S. District Court system, how does one change a Civil Lawsuit with a Plaintiff and one Defendant to a class Action Lawsuit with one Plaintiff and several Defendants?

By definition, a class action lawsuit involves multiple plaintiffs. It may or may not involve multiple defendants. The case you describe is not a class action, and will not become one if more defendants are added.
To be clear: you may be able to add more defendants, depending upon the stage of the case. But doing so won't make it a class action.
