Is repeating/reporting a true (derogatory) religious statement to a manager, that an employ of a fitness Center made to me, considered defamation?

A statement is not defamatory if it's true.
"He has syphilis" is not a defamatory statement if the person actually has syphilis. One isn't liable for defamation if he tells the truth.
