Legal Question in Civil Litigation in Texas
If you get a traffic ticket for failure to stop at a stop sign & you ask for a jury trial, & the jury finds you guilty, & you are assessed a fine, but you have no money to pay the fine & no job, can you be put in jail?

I don't think so. Running a stop sign is a class C. Misdemeanor which is not punishable by jail time. You might try to work out a payment plan with the court so you can pay the fine over time.
