can an employer fire an employee for working with a former employee on a subcontracted job in the emplyees off time

Yes.
Texas law allows you to fire an employee for any reason or for no reason.
The exceptions are: I fired you because you're a Jew. I fired you because you're the only Negro in the factory. I fired you because you're not a Christian.
These are called "suspect classes."
