How much can they say
I am looking for a new job. How much can my previous employer say about my performance there? Good or bad.

Employers can tell the truth about your performance, including their opinion of your performance, within reason. Most employers, however, adopt a policy of providing only a neutral reference and basic information such as your position and dates of employment. Some will say if you resigned or were terminated, and some will simply add information as to whether you are eligible for re-hire. Occasionally, even without your permission, they will disclose your salary, but that is unusual.
