Is it lawful for an employer to NOT involve law enforcement in the case of theft or mishandling of money within that company, and fire a person without officially charging that person with any crime?

The general answer is NO if it their property that was stolen. However, if the property stolen was someone else's that could be acting in conspiracy with the theft by acting to cover it up. It happens more often than you think. I saw a Bank that lost $60,000 to a theft hide the fact since they looked totally stupid for how easy it was for the crook to steal from them. They did not want that to get out, so they never got law enforcement involved and bit it.
