Legal Question in Employment Law in Texas

I moved to Texas specifically for a job. After 7 1/2 months of a 12 month employment contract I was fired and told they didn't think they were getting their money's worth. Yet the entire time I recieved several e-mails about how great I was doing. The day I was fired I was locked out of the shared server where the e-mails are and am being kept from retrieving them, but they are on that server. No disciplinary action against me of any kind during the time I worked here. Doesn't moving here change the "at will" side of things?

On top of that I was hired as a Regional Director at a pre determined salary and when I got here the payment structure changed drastically and was never stated in the contract. I was informed that I was to only recieve 90% of the salary for a length of time then 110% this was not in the contract. I got here and was informed I was going to have to do a supervisor's job instead of a Regional Director's. this can be proven too.

Can I do something about this, and do I qualify for unemployment benefits?
