Legal Question in Employment Law in Texas

Please take a look on the following situation:

I got a job offer trough e-mail from a Manager in Plano Texas to be hired in Mexico offices of that company but my manager will be in Plano, I accepted the job offer by email and Mexico offices send me all the papers needed to sign the contract.

I sign a resignation letter on my current company in Mexico, but then I got a call from the Plano manager and told me that there was a broken process and now they can not hire me, so now I dont have job because I signed my resignation letter already after accept the offer.

I have all the e-mails with the job offer and my written acceptance, but I didint sign the contract because they canceled, and now I dont have job.

Can I sue the company in Texas?
