Legal Question in Landlord & Tenant Law in Texas

I had a roommate who moved out without notice owing rent and utility bills. Her family is telling the constable when he tries to serve her that she doesn't live when in fact she does. Is there a way I can get proof ot this OR is ther another way, i.e. lien, judgement, etc. to get the money she owes me?

You can serve her through substituted service, set it for hearing and take a default judgment if she doesn't show up.
