I attend a major college, where the dorms are set up in suite style (bathroom in between 2 rooms). Last weekend, while I was out of town, $100 turned up missing from my room. the only people with access to my room during this time where the college's maintenance crew, who entered my room 2x. They claim that they may have left the bathroom door unlocked (I had locked it before I left), allowing a way of access to my dorm. Either they took the money, or someone with access to the room through the suitemate took the money. The ''criminal'' investigation is going nowhere, but do I have any options as far as the University is concerned?

Not worth the trouble. It would cost you appx. $75 to file a claim in small claims court plus the lost time.
