Small claims suit
I have filed a small claims suit and included the amount I am suing. However, I forgot one of my expenses on the suit. Can I change the amount of the suit once the case goes before the Court to include the omitted expense I forgot to mention when I filed the suit?

No. You'll have to file an amended complaint to add in that overlooked expense. Talk with the civil clerk about doing that.
