If someone borrows something to be used by them for an activity involving an organization, and the item gets damaged, who is responsible? the person who borrowed it or the organization?

Without having more information, the answer to your question is:
The person who borrowed it, unless you can get the organization on the hook (re liability) under a theory called respondeat superior. And you probably can't.
