When adding a name (no sale) to a deed would there be a reason to use a general warranty deed and a quitclaim deed?

That would depend on what you are trying to convey. Quitclaim deeds ordinarily make no warranties of title and thus only convey whatever interest, if any, the seller may have in the property.
