Owner Finance / Gift Deed

my husband wants to owner finance 100 acres of land for a nephew - would a gift deed be appropriate for this type of transaction?

No. You should contact an attorney to draw documents that will protect your interests in the event nephew doesn't pay. Typically I charge $500 for a complete doc prep package so you can get an idea of cost.
