Legal Question in Real Estate Law in Texas
After having a survey done today, we realized that my sweet old neighbor's 10 x 10 shed is on our property. Can I remove it when she sells?

If and when she sells, the buyer should be getting a survey done and they should realize that the shed on your property. If there is a sale soon, why don't you talk to the new buyer about the situation. Frankly, you should not have to pay for or do the work.
You might also go ahead and talk to the neighbor now to let her know the situation. If you don't care if it remains while she is there, tell her. But, that way she will be able to advise her realtor. (That makes me have an idea, too. If she puts the house up for sale, you will see the sign. Call the realtor yourself and let them know.)
