if a name is added to a home deed but the will was not changed to reflect the change, does the deed or the will carry more legal weight?

The deed. You can't convey what you do not own.

Assuming the deed has been filed, then it has already transferred the interest in the property. The will only transfers a snapshot of the person's assets at the moment of death.
