do all assets automatically go to the surviving spouse if there is no existing will in the state of Texas.

No. There are a number of different scenarios. The issues depend on the following:
1. When the death occurred. (The laws changed in the early 1990s)
2. Whether the property in question is separate or community.
3. Whether or not there are any children of the deceased that are not the children of the spouse.
4. Whether there are any claims/liens/designations on the property.
