My Father died and left a will saying my sister could have a very expensive piano...Wouldn't it be considered mutual property of my Mother's too....They were married when he died and she was with him when he bought it....

Yes, If he bought it when they were already married, the piano is community property and he cannot dispose of it as if it was his alone.
