Legal Question in Wills and Trusts in Texas

My grandfather recently had a stroke...his gold digger wife of 4 years obtained power of attorney over him and sold his company without talking to any of his family about it...family that helped him build the company from the ground up...family that was notified of every single change ever made to his will. He was very up front about how he wanted his assets distributed to his family. Now she voided his will and is selling all of his assets and putting it into a living trust solely in her name. He is still mobile...and somewhat able to understand what is going on. Is there anything we as a family can do to ensure that everything our family has worked for doesn't get taken away from us. Is there any way we can find out how many millions of dollars she sold the business that we've worked so hard to build into a very lucrative company. I am a 20 year old college student...I lost my dad to the work environment of this business...now I fear our entire lively hood is being stolen out from under us. My aunts and uncles are just hopeing she does the right thing...but I don't think she will. They want to sit around and let this go on...I do not. I want to fight for what is ours...not let some gold digger take it. Is there anything I can do. Is there anyway of finding out how much the business was sold for. Thank you so much for your help.
