Information that beneficiaries are entitled to.

Is a beneficiary in a will entitled to a copy of bank records (statements) of the account established by the executor in the name of the estate? If so can this only be obtained through the executor?

Are copies of the decedents final FIT 1040 and the 1041 for the estate made available to a beneficiary?

Bank accounts are made public records when the executor files the estate inventory. You are not entitled to bank statements or FIT returns, although you may get them through court action if you have reason to believe the executor has been less than honest.
