Am I under any legal obligation to include a son in my will who was legally adopted by my ex wife and her husband over 40 years ago?

No. In Texas, you never have an obligation to include anyone in particular in your will. If you want to, you can leave everything to your next-door neighbor.

The only restriction is: you can give away only what's yours.
