Texas General Power of Attorney

If a Texas ''General Power of Attorney'' form is literally void of the word ''Durable'' on it, and is also void of witness signatures and is notarized, is this a legal and enforceable document?

Yes. A Texas power of attorney need not be witnessed, and it doesn't have to have the word "durable." You would have to read it carefully to see if it is in fact "durable," meaning that it continues to be effective when the principal loses capacity.
