Can I draft a will that only leaves a nominal amount of cash to my wife and leave everyting else to my children? Or would I be better off not drafting a will at this time and forcing an even split of assets between my wife and kids.

You can leave your estate to anyone you want. However, keep in mind that you and your wife own your community property equally, and you cannot give away her half of the community property. You can give your half of the community property and all of your separate property to your children in your will.
