Legal Question in Wills and Trusts in Texas

I am wanting to get a will done just in case anything ever happened to me or my husband. We are not legally married as of the moment but we have 2 kids together and i have 1 son from a previous relationship. We have decided if anything ever did happen we would want all 3 kids to go to my mother. I do not want my son to go to his bilogical father since he hasn't really been there while he is growing up. If i stated in my will that i wanted all 3 kids to stay together and not be split apart, would he be able to fight my mother for guardian ship of our son or would it be better to try to get him to sign his rights away and let my husband adopt him?

Have the father of the children sign away his rights and have the new man adopt. You should also have a will drawn up as well.
