Legal Question in Wills and Trusts in Texas

The wife and I name each other as primary benficiaries

We are naming our Grandson as cotingent benificary under the Texas UTMA and naming a Custodian on a lot of our assets.

Do we have to set up these Custodial accounts Now ,or is this done by the Custodian if we both pass??. Also can there be different Custodians on different assets ??
