Wills In The State of Texas

For a married couple with adult children, can my assets be divided between my wife and children or must all assets be left to my wife?

Your will allows you to leave your assets to whomever you so desire. Your wife is entitled to her 1/2 of the community estate as a matter of law, since that's not yours. You can divide your assets between your wife, your kids, your best friend, and the church if you so choose.
