Wills for step-parents

My mother and step-father have standard wills, leaving everything to the surviving spouse. What happens when one parent dies, can the surviving spouse change their will and leave out the other spouse's children?

That is possible. Your mother might want to hire an attorney to draft a revised estate plan to handle this situation.
