If my own written will is notorized in Texas will it be as legal as those that have two witnesses?

It will more than likely be "legal" but you're going to have problems. Don't do your own will. Please at least have it reviewed by a lawyer. Most wills for non-taxable estates are very inexpensive. Saving a few dollars on doing your own will may wind up costing you more than you saved when it comes time to probate.
