Legal Question in Wills and Trusts in United Kingdom

My uncle was taken into a nursing home a couple of months ago and since he is not able to look after his own financial affairs, my cousin chose a solicitor who now has power of attorney. Her work mainly concerns the finances of his home, paying bills etc (this is in Northern Ireland). My sister and I (based in England) are executors of his will and we travelled over last week and met the solicitor. We calculated that her fees are causing quite a drain on his finances and would like to take over the power of attorney ourselves. When we asked her to see some paperwork, we were told that we had no right to see anything, so we are unable to see whether we think she is overcharging or not. Can someone please advise me as to how we would go about revoking her power of attorney and taking over it ourselves, and also, is it true that we have no right to see any of her paperwork?
