When a person purchases a product from a merchant and the product is delivered, if the merchant (of their own accord) includes, with delivery, an automatic enrollment in a quarterly subscription to a completely different product constitute an enforceable contract especially when the buyer has no foreknowledge of the auto-enrollment nor has he made any consideration of the auto-enrollment?

The proper thing to do is to contact the merchant and in writing disavow the subscription. If you did not request nor sign up for the subscription you are not obligated to pay for it. However, you have a duty to notify the business of their error.
