Legal Question in Credit and Debt Law in Utah

Collections

We have a small business in Utah. We provided wood products to a local business and they have not paid. They owe us with calculated interest $ 32000.00. Can we file a civil suit without hiring an attorney and what is the process. I can't seem to get any answers. I would be interested in finding a good attorney, I'm just not finding any locally the do collections work. This has cost us a lot of other work that we could not perform because we had tied up all of our product in this other business with the agreement they would have us paid in 2 weeks, are we entitled to recover some of our losses due to the financial hardship they have put us through? What should we do?
