Legal Question in Criminal Law in Utah

I was recently fired from my job for stealing, but I was pressured to admit that I stole much more than I really did. When I told them the truth they would not except it and called me a liar. They said that if I gave them more than I would have a better chance at keeping my job. I was so afraid of losing my job that I signed forms saying that I commited much more theft than I really did and that I would pay it back. I felt very bullied in this situation and don't know what to do. Am I going to be held accountable for all of that money?

Very likely. Restitution is usually the amount, or more, than what you stole. If you really want to undo it, if it is still possible, you need to move quickly. If you had an attorney or you were appointed counsel, talk to them first. If not, talk to an attorney right away to see if you can still do something about it. Time is of the essence.
