Legal Question in Family Law in Utah

My best friend and basically sister, wants to name me the guardian of her two young children. She lives in Texas. I live in Utah. She is afraid that, even if it says in her Will that the kids go to me, her mom will fight it and I won't have a chance. I am a divorced single parent. Her mother has a house and is stable. It is in the best interest of the children to go to me. If the grandparents were to fight the Will, who would win? Would I stand a chance? Would it make a difference if the Will were a notarized piece of paper vs. something a lawyer drew up?

Have her name you the guardian in her will. If it is contested the court will decide on what is best for the children at the time of your death.
