My wife wants full legal custody of my daughter, I am unsure if I should let her.

You should retain joint legal custody of your daughter. You should also get 50-50 residential custody. The default provisions in the Utah Code only grant you about 15-20%, rather than 50%. It may be difficult now to share custody 50-50 but it is in your daughter's best interests, she needs two parents, not one with the dad getting some visits.
