Does an employer have to provide insurance for a full time (40 hours a week) employee who has worked there for nearly 2 years? There are 15 employees there currently and the current owner thinks he can get insurance for all of them and only have to pay 100 dollars a month...total...for all of them combined. Can he withold insurance from his employers simply because he is a money grubber?

There is no law in Utah(yet) requiring an employer to provide health insurance. An employer cannot Even if an employer is a money grubber he does not have to provide health insurance. Since you are so dissatisfied with your employment - start looking for another job.
