if I bout a house with my cousin and we both signed the contracts and she moves out and won't pay, what are my options?

Pretty broad question, but let me take a stab at it.
If you signed the note you are liable for the whole debt. If she signed the note she is liable for the whole debt. If you both signed the note, you are each liable for the whole debt. If she moves out, the mortgage co does not care as long as payments are made. If you cannot make payments without her help you will need to sell the house asap or sue cousin. But even then, if cousin can't or won't pay, if you can't make the payments without cousin's help, if you can't sell it for what is owed, you probably need to consider turning it back to the bank.
